As a Dumpling Prep / Trainee, you are part of the heart of the Din Tai Fung kitchen. In this role, you prepare, assemble, fold, and steam the dumplings that our guests know and love. You’ll help showcase the star of our menu while playing a key role on the kitchen team and in the overall guest experience.
Dumpling Prep / Trainees are responsible for preparing dumplings from start to finish. This includes measuring and cutting dough, rolling skins, stuffing, sealing, arranging, and steaming dumplings, while ensuring proper meat and allergen identifiers are added. You’ll also help maintain a clean and organized dumpling room, label items according to procedures and regulations, and participate in monthly staff and dumpling meetings as part of your development.

PAY RATE FOR DUMPLING PREP: $22.50/hour
The base salary or hourly wage range for this role will vary based on multiple factors, including but not limited to prior experience, relevant expertise, current business needs, and market factors. Range is not inclusive of potential bonus or benefits. Your recruiter can share more information about the salary range and other factors during the hiring process.

Shift: Tuesday - Saturday: 2pm - 9:30pm

TRAINING EXPECTATIONS:
Your journey at Din Tai Fung will begin as a Dumpling Trainee. Our hands-on dumpling training program is designed to provide you with the skills and knowledge you need to ensure you have the tools for success. Upon completion of the program, graduates will transition into the Dumpling Prep role, accompanied by a competitive hourly wage increase. SUPPORTING FUNCTIONS:
- Keeps all kitchen areas clean and sanitized
- Organizes items within the walk-in coolers and freezers
- Lifts/moves boxes, bags, chairs, and tables (up to 50 pounds)
- Assists with regular deep cleaning of the kitchen
- Maintains confidentiality regarding all propriety information, including but not limited to recipes and Standard Operating Procedures (“SOP’s“)
JOB REQUIREMENTS FOR DUMPLING PREP:
We are searching for friendly, energetic, highly motivated people who will thrive in a fast-paced, team-oriented environment
- Dumpling experience is not required
- Experience in prep, specifically with dough (pastry, pizza, etc.) is a plus

Job Responsibilities & Tasks:
- Prepares, measures, and cuts dough
- Rolls dumpling/bun skins
- Stuffs, closes, and arranges dumplings/buns in a steamer
- Adds meat and allergen identifiers
- Steams dumplings/buns
- Maintains a clean working space and dumpling room
- Labels all items in accordance with regulations and procedures
- Attends monthly staff and dumpling meetings
PHYSICAL DEMANDS
- Frequently needs to work in wet or humid conditions, near moving parts, in extreme non-weather heat, and in extreme non-weather cold
- Regularly required to sit, stand, walk, bend, lift, use hands and fingers, reach with hands and arms, talk and/or hear.
- Specific vision abilities required by this job include close vision, distance vision, peripheral vision, depth perceptions and the ability to adjust focus
- Must be able to lift up to 50 pounds multiple times per day, and push a cart weighing up to 100 lbs.
- Constantly exposed to both hot and cold temperature conditions is pertinent.
- Follows all safety procedures, uses restaurant safety words during all shifts, and asks for assistance
- as needed
- Must practice proper body mechanics and use appropriate personal protective equipment to avoid injury:
- Cutting gloves when cutting
- Back support belt when lifting heavy items
- Goggles and long gloves when working with chemicals
- Other PPE as needed (if applicable)
